I struggled with my relationship with food since my teens; my weight fluctuated many times a year and I developed cystic acne as an adult. I constantly yo-yo dieted and got down on myself for binge eating. I was a serious sugar addict, and to make matters worse, my diet was mainly compromised of refined carbs and dairy. My body started to shut down at 25 while training at the French Culinary Institute in New York. Doctors had no answers and would tell me it was in my head. They overprescribed antibiotics, pushed anti-anxiety medication, and sleeping pills. My gut told me something wasn't right. I didn't want to be dependant on drugs for the rest of my life. This propelled me to take my health into my own hands and begin healing myself. Through endless nights of research, I became wildly passionate about health, particularly using food as medicine, and in the process, became a certified holistic health coach.
Over the last two years, I have immersed myself into plant-based cuisine, certified through PlantLab Culinary. When I create dishes, I fuse my classic French and plant-based trainings, and work on building layers of flavor- balancing salt, sweet, sour, bitter and umami. I always source the highest quality ingredients: seasonal, organic, local, non-GMO and unprocessed. A diet rich in high-frequency foods, like a freshly picked ripened apple or sprouted raw almonds dusted with maca, raises vibrations and connects us to a higher consciousness. Clean cooking methods, like dehydrating or sprouting, are essential for retaining nutrients and increasing bioavailability of nutrient absorption.
